Ingredients :

3 teaspoons tamari

8 ounces soft tofu, make small cubes

½ cup red bell pepper

1 yellow onion, thinly sliced

6 large mushrooms, sliced

½ cup green beans

¼ cup vegetable stock

Cooking oil as needed

Salt and white pepper to the taste

Directions :

Take your Instant Pot and place it on a clean kitchen platform. Turn it on after plugging it into a power socket.

Put the pot on “Saute” mode. In the pot, add the oil, mushrooms, and onions; cook for 2-3 minutes until the ingredients become soft.

Add the tamari and tofu; cook for 2 more minutes. Mix in the stock and stir gently.

Close the lid and lock. Ensure that you have sealed the valve to avoid leakage.

Press “Manual” mode and set timer for 3 minutes. It will take a few minutes for the pot to build inside pressure and start cooking.

After the timer reads zero, press “Cancel” and quick release pressure.

Add the green beans and bell pepper. Press “Manual” mode and set timer to 1 minutes. After the timer reads zero, press “Cancel” and quick release pressure.

Carefully remove the lid; add the pepper and salt. Serve warm!
